Frames per second is the fluidity and smoothness of the video, it has absolutely nothing to do with speed of the lapse., I would of course recommend 240 for extremely smooth playback and wildly fluid slow most, no stutters what so ever. Also once you touch and hold to edit open apps, you can then swipe up.

When you are in photos and looking at your thumbnails of videos, just press on the the thumbnail till you feel the haptic pulse and a preview of your video will start to play. Release your finger and it goes back into your list

I have a S8+ but i really wish i could own a iPhone X like the design a lot.
Edit: I think my S8+ is now old i've had it for 8 months.

You can still swipe up to close the apps. After you hold it down and the minus sin appears then you can swipe them to close
