Wine Marinated Pork Roast


Ingredients

.....1 (3 pound) rolled pork loin roast
.....1 garlic clove, halved
.....1 1/2 teaspoons salt
.....1 teaspoon paprika
.....1/2 teaspoon pepper
.....1 cup dry white wine
.....1/2 cup chicken broth
.....1 (4 ounce) jar diced pimentos, drained

Preparation

Rub pork roast with cut edges of garlic, salt, paprika and pepper.  Place in baking dish; pour wine over roast.  Cover and refrigerate, turning meat occasionally.

Preheat oven to 325 degrees.  Place roast on rack in open roasting pan; reserve marinade.  Insert meat thermometer into center of roast.  Roast meat about 2 1/4 hours or until meat thermometer reaches 170 degrees.  Place roast on warm platter; remove strings.

For sauce:  Remove rack and pour off all but 2 tablespoons drippings from pan; strain marinade and stir into drippings with chicken broth and pimentos.  Over high heat, heat mixture to boiling.  Reduce heat to medium; cook 5 minutes to blend flavors, stirring occasionally.  Serve sauce with roast.

Yield:  10 to 12 servings
