Veal Scallopine


Ingredients

.....1 1/2 pounds veal steak, cut 1/2 inch thick and into 6 pieces
.....1/3 cup flour
.....1 1/4 teaspoons salt
.....1/4 teaspoon ground black pepper
.....2 tablespoons butter
.....3 tablespoons olive oil
.....1/4 teaspoon instant minced garlic
.....1 1/4 cups chicken stock or water
.....3/4 cup dry sherry

.....1 1/2 teaspoons parsley flakes
.....1/2 teaspoon thyme leaves
.....1/4 teaspoon marjoram leaves


Preparation

Pound steaks to 1/4 inch thickness with a mallet.  Dredge in flour mixed with salt and black pepper.  Heat butter, oil, and garlic in a 10 inch skillet.  Add as many pieces of veal at a time as the skillet will accommodate.  Brown on all sides.

Push the browned meat to one side and repeat, using remaining veal.  Pour in chicken stock or water and 1/2 cup sherry.  Cover and cook 30 minutes or until meat is tender.  Add herbs 10 minutes before cooking time is up.  Just before serving, blend in the remaining 1/4 cup sherry.  Cook 1/2 minute or only until wine is hot.  Serve with cooked rice.

Yield:  6 servings
