Beef And Pasta Salad |

Ingredients
Salad .....1 cup uncooked medium shell macaroni .....1 (8 ounce) sliced, cooked roast beef, cut into 2 x 1/2 inch strips .....1 cup (2 stalks) celery, sliced 1/2 inch .....1 cup halved cherry tomatoes .....1/2 cup sliced 1/4 inch red onion, separated into rings Dressing .....1 cup plain yogurt .....1/2 cup mayonnaise .....1/4 cup chopped fresh parsley .....1/4 cup chopped fresh chives .....3/4 teaspoon chopped fresh tarragon .....1/4 teaspoon salt .....1/4 teaspoon pepper |
PreparationCook macaroni according to package directions. Rinse with cold water. Drain; set aside. In large bowl stir together all remaining salad ingredients; stir in macaroni. Cover, refrigerate at least 1 hour. In small bowl stir together all dressing ingredients. Cover; refrigerate at least 1 hour. Pour dressing over salad; toss gently to coat.Yield: 6 servings |
