Spice Cake

Ingredients

.....1 cup butter, softened

.....2 cups sugar
.....4 eggs, separated
.....3 1/2 cups all purpose flour
.....1 teaspoon soda
.....1/4 teaspoon salt
.....1 teaspoon ground nutmeg
.....1 teaspoon ground cinnamon
.....1 teaspoon ground cloves
.....1 teaspoon ground allspice
.....1 cup buttermilk
.....1 cup raisins
.....1 cup chopped pecans

Preparation

Cream butter; gradually add sugar, beating until light and fluffy and sugar is dissolved.  Add egg yolks, beating well.

Combine flour, soda, salt, and spices; mix well.  Add flour mixture to creamed mixture alternately with buttermilk, beginning and ending with flour mixture.  Stir in raisins and pecans.

Beat egg whites (at room temperature) until stiff peaks form; fold into batter.

Pour the batter into a greased and floured 10 inch tube pan.  Bake at 350 degrees for 1 hour and 20 minutes or until wooden pick inserted in cake comes out clean.  Cool in pan 10 minutes; remove from pan, and cool completely.

Yield:  one 10 inch cake
