Sour Lemon Loaf Cake


Ingredients

.....1 1/3 cups butter
.....1 cup plus 2 tablespoons granulated sugar
.....5 large eggs
.....1 tablespoon lemon zest (yellow skin only, no white)
.....2 teaspoons baking powder
.....2 cups all purpose flour
.....1 pinch salt
.....1/2 cup lemon juice, freshly squeezed
.....3/4 cup powdered sugar


Preparation

Preheat oven to 350 degrees and butter and standard 8 x 5 x 5 inch loaf pan.  Cream butter and sugar    together until fluffy and light.  Beat in eggs one at a time, beating well after each addition.

Add zest, baking powder, flour and salt and beat until smooth.  Pour batter into prepared loaf pan and bake for 50 to 60 minutes or until toothpick inserted in center comes out clean.

Cook cake in pan for 10 minutes.

Poke many holes in cake with an ice pick or knitting needle.  Blend lemon juice and powdered sugar well and pour over cake.  Let cake cool completely before removing from pan.  Sprinkle with powdered sugar and slice to serve.

Yield:  1 loaf
