Ingredients
.....1 (3 pound) chuck roast.....1 large onion, chopped .....1 stalk celery, chopped .....1 large green pepper, chopped .....2 cloves of garlic .....1 teaspoon salt .....2 cups catsup .....2 tablespoons packed brown sugar .....2 tablespoons vinegar .....1 teaspoon allspice .....1 teaspoon dry mustard .....1/2 teaspoon chili powder .....3 drops of hot sauce .....1 teaspoon Worcestershire sauce .....1 bay leaf .....1/4 teaspoon garlic salt .....1/4 teaspoon paprika |
PreparationPlace roast, onion, celery, green pepper and garlic in large kettle; add 1 1/2 quarts water. Cover; bring to a boil. Reduce heat; cook for 4 hours. Remove roast, reserving 1 1/2 cups broth; cool. Shred roast; return to reserved broth. Stir in remaining ingredients. Cook, uncovered, for 1 hour, adding water as needed.Yield: 20 servings |
