Red Apple Glazed Chicken


Ingredients

Stuffing
.....1 (16 ounce) jar spiced apple rings, reserve juice
.....1 1/2 cups dried bread cubes
.....1 cup (2 stalks) celery sliced 1/2 inch
.....1/4 cup chopped onion
.....1/4 cup butter, melted
.....2 tablespoons reserved spiced apple juice or water
.....1/2 teaspoon salt
.....Pinch of pepper
.....Pinch of allspice
.....4 to 5 pound whole roasting chicken

Glaze
.....1/4 cup reserved spiced apple juice
.....2 tablespoons light corn syrup
.....2 tablespoons water

Preparation

Heat oven to 350 degrees.  Cut 5 spiced apple rings into eighths; reserve remaining apple rings.  In medium bowl stir together cup apples and remaining stuffing ingredients.  Stuff chicken; secure wings to body of chicken.  Place chicken on rack in roasting pan.  In 1 quart saucepan stir together all glaze ingredients.  Cook over medium high heat, stirring occasionally, until heated through (5 to 6 minutes).  Spoon glaze over chicken.  Bake, basting occasionally, for 1 hour.  If needed, add 1/4 cup water to basting juices.  Loosely cover chicken with aluminum foil.  Continue baking, basting occasionally, for 1 to 1 1/2 hours or until chicken is fork tender.  Garnish with reserved apple rings.

Yield:  6 servings
