Pineapple Nut Bread


Ingredients

.....3/4 cup brown sugar
.....1/3 cup butter
.....2 large eggs
.....1 (8 ounce) can sweetened crushed pineapple, undrained
.....1 teaspoon vanilla extract
.....1 cup nuts, chopped
.....2 1/4 cups sifted flour
.....2 teaspoons baking powder
.....1/4 teaspoon baking soda
.....1/4 teaspoon salt

Topping

.....1 tablespoon sugar
.....1/4 teaspoon cinnamon
.....1/4 cup chopped nuts



Preparation

Preheat oven to 350 degrees.  Cream butter and sugar.  Add eggs and beat just enough to blend.  Stir in the entire contents of the pineapple can, the vanilla, and the nuts.  Sift together the flour, baking powder, baking soda, and salt.  Stir in the dry ingredients into the pineapple mixture just until there are no more dry lumps; do not overmix. 

Turn into a buttered loaf pan and set aside for 15 minutes.  Combine the ingredients for the topping and sprinkle over the batter, pressing in lightly with the back of a spoon.  Bake for 1 hour or until bread tests done.

Yield:  1 loaf
