Pickled White Onions


Ingredients

.....3 pounds 1 inch white onions
.....Cold water to cover
.....2 tablespoons coarse salt
.....Cold water to cover

.....3 cups white vinegar
.....1 cup water
.....1/2 cup sugar

.....1/2 teaspoon whole cloves
.....6 pods (1 1/2 inches each) dried red pepper
.....6 small bay leaves


Preparation

Soak unpeeled onions 2 hours in water to cover with 1 tablespoon of the salt added.  Remove onions from water and peel them.  Soak peeled onions 48 hours in water to cover with the remaining salt.  Before cooking, drain onions and rinse them in cold water.

Place the next 3 ingredients in a 4 quart saucepan.  Tie cloves in a cloth bag and add.  Bring mixture to boiling point.  Add onions and boil 3 to 5 minutes or until they are thoroughly hot.  Remove spice bag.

Pack in hot, jars, having onions covered with boiling vinegar.  Add 1 pod red pepper and 1 bay leaf to each jar.  Seal airtight at once.  Let onions stand 5 to 6 weeks before serving.

Yield:  3 quarts
