Pickled Cauliflower


Ingredients

.....Boiling water
.....1 tablespoon fresh lemon juice
.....3 cups fresh cauliflowerets
.....1 cup fresh onion rings
.....1/2 green pepper, cut in strips
.....1/4 red pepper, cut in strips
.....1 cup white vinegar
.....1 1/4 cups water
.....1/2 cup sugar
.....1/2 teaspoon salt
.....8 whole black peppers
.....1/2 teaspoon mustard seed
.....1/2 teaspoon celery seed
.....1/2 teaspoon tarragon leaves


Preparation

Pour boiling water and lemon juice over cauliflowerets, onion rings, and pepper strips.  Cover and let stand while preparing the vinegar mixture.

Combine vinegar, water, sugar, salt, and spices in a saucepan.  Bring to boiling point.  Boil 5 minutes.  Drain water off cauliflower, onion, and pepper strips and discard it.  Add hot vinegar mixture.  Cool, cover, and marinate overnight in refrigerator or until ready to serve.

Yield:  5 cups
