Ingredients
.....Boiling water.....1 tablespoon fresh lemon juice .....3 cups fresh cauliflowerets .....1 cup fresh onion rings .....1/2 green pepper, cut in strips .....1/4 red pepper, cut in strips .....1 cup white vinegar .....1 1/4 cups water .....1/2 cup sugar .....1/2 teaspoon salt .....8 whole black peppers .....1/2 teaspoon mustard seed .....1/2 teaspoon celery seed .....1/2 teaspoon tarragon leaves |
PreparationPour boiling water and lemon juice over cauliflowerets, onion rings, and pepper strips. Cover and let stand while preparing the vinegar mixture.Combine vinegar, water, sugar, salt, and spices in a saucepan. Bring to boiling point. Boil 5 minutes. Drain water off cauliflower, onion, and pepper strips and discard it. Add hot vinegar mixture. Cool, cover, and marinate overnight in refrigerator or until ready to serve. Yield: 5 cups |
