Ingredients
.....1 cup firmly packed brown sugar.....1/2 cup butter, softened .....2 tablespoons all purpose flour .....1/4 teaspoon cinnamon .....2 tablespoons lemon juice .....5 cups (5 medium) peeled, cored, sliced 1/8 inch pears Biscuits .....1 1/2 cups buttermilk baking mix .....1/2 cup milk .....1 tablespoon sugar .....1/4 teaspoon cinnamon .....Vanilla ice cream or whipping cream |
PreparationHeat oven to 400 degrees. In large mixer bowl combine brown sugar, butter, flour, 1/4 teaspoon cinnamon and lemon juice. Beat at medium speed, scraping bowl often, until well mixed (1 to 2 minutes). Add pears; toss to coat. Spoon into 2 quart casserole dish. Cover; bake for 25 to 35 minutes or until pears are crisply tender. Meanwhile, in small bowl combine baking mix and milk; stir until just moistened. Drop dough by spoonfuls onto hot pear mixture to make 9 biscuits. In small bowl stir together sugar and cinnamon. Sprinkle sugar mixture over biscuits. Return to oven, uncovered; continue baking for 15 to 20 minutes or until biscuits are lightly browned. Serve warm with ice cream or whipping cream.Yield: 9 servings Note: 5 cups (5 medium) peeled, cored, sliced 1/8 inch apples can be substituted for 5 cups sliced pears. |
