Ingredients
.....2/3 cup graham cracker crumbs .....5/8 cup sugar .....1/4 cup butter, melted .....2 (3 ounce) packages peach gelatin .....2 tablespoons lemon juice .....1 (8 ounce) package cream cheese .....1 (6 ounce) can evaporated milk, chilled .....1 1/2 cups diced sweetened peaches |
PreparationCombine crumbs and 2 tablespoons sugar, mixing well, stir in butter. Press crumb mixture into bottom of springform pan. Dissolve gelatin in 2 cups boiling water; stir 2 cup cold water and lemon juice into gelatin mixture. Chill until partially set. Blend remaining sugar and cream cheese until light and fluffy; beat in milk. Whip gelatin mixture until light and fluffy; fold into cream cheese mixture. Chill until partially set. Drain peaches; fold into cheese mixture.Pour into crust lined pan; chill until firm. Unmold to serve. Yield: 8 to 10 servings |
