Ingredients
.....4 ounces Parmesan cheese, grated.....1/3 cup basil leaves .....1/3 cup parsley leaves .....2 tablespoons sage leaves .....1 large garlic clove, peeled .....3 medium shallots, peeled .....2 tablespoons olive oil .....2 tablespoons butter .....6 ounces prosciutto, cut into 1/4 inch dice .....3/4 cup heavy cream .....1/2 teaspoon salt .....1/4 teaspoon crushed red pepper flakes .....1/4 teaspoon freshly ground black pepper .....12 ounces pastina or other small pasta .....1 package frozen peas |
PreparationGrate Parmesan cheese and reserve. Chop the basil, parsley, and sage and put aside. Mince garlic and shallots and cook in the oil and butter in a large skillet over medium high heat until softened, about 3 minutes. Add the prosciutto and cook for 3 minutes. Add the herbs, cream, salt, crushed red pepper, and black pepper and cook until the sauce is thickened, about 5 minutes. Meanwhile, cook the pasta in boiling salted water until done, about 4 minutes, adding the peas in the last 30 seconds. Drain and return to the pan. Stir in the prosciutto mixture and Parmesan.Yield: 8 servings |
