Orange Souffle Bread Pudding


Ingredients

.....2/3 cup sugar
.....3/4 teaspoon ground mace
.....1 teaspoon grated lemon rind
.....1 tablespoon grated orange rind
.....2 tablespoons fresh lemon juice
.....1/2 cup fresh orange juice
.....1 teaspoon vanilla extract
.....2 cups soft bread cubes, crust removed
.....1/2 cup butter, melted
.....4 large eggs, separated
.....1/4 cup milk
.....1/4 teaspoon salt


Preparation

Combine the first 9 ingredients in a mixing bowl.  Beat egg yolks until thick and lemon colored, add milk, and pour over bread cube mixture.  Add salt to egg whites and beat them until they stand in soft, stiff peaks.  Fold into custard.  Turn into a 1 quart casserole, having only the bottom buttered.  Place in a pan of hot water.  Bake at 325 degrees for 55 minutes or until souffle is done.  Serve warm.

Yield:  6 servings
