Molasses Rolls |

Ingredients
.....2 cups old fashioned rolled oats.....1 1/2 cups boiling water .....1/4 cup butter .....2 (1/4 ounce) packages active dry yeast .....1/2 cup warm water (105 to 115 degrees) .....6 1/4 to 7 1/4 cups all purpose flour .....1cup firmly packed brown sugar .....1/3 cup light molasses .....2 eggs .....1 1/2 teaspoon salt .....Butter, softened |
PreparationIn medium bowl stir together oats, boiling water and butter until butter is melted. Cool to warm (105 to 115 degrees). In large mixer bowl dissolve yeast in warm water. Add oat mixture, 2 cups flour, brown sugar, molasses, eggs and salt to yeast. Beat at medium speed, scraping bowl often, until smooth (1 to 2 minutes). By hand, stir in enough remaining flour to make dough easy to handle. Turn dough onto lightly floured surface; knead until smooth and elastic (about 10 minutes). Place in greased bowl, turn greased side up. Cover; let rise in warm place until double in size (about 1 1/2 hours). Dough is ready if indentation remains when touched. Punch down dough; divide in half. With floured hands shape each half into 18 rounds. Place in 2 greased 13 x 9 inch baking pans. Cover; let rise until double in size (about 1 hour). Heat oven to 375 degrees. Bake for 20 to 25 minutes or until golden brown. If desired, brush tops of rolls with butter.Yield: 3 dozen rolls |
