Nutty Cocoa Brownies

Ingredients

.....2 cups sugar

.....2 cups self rising flour
.....1 teaspoon soda
.....1/4 cup plus 1 tablespoon cocoa
.....1 cup butter
.....1 cup water
.....1/2 cup buttermilk
.....2 eggs, beaten
.....1 teaspoon vanilla extract
.....Frosting (recipe below)

Preparation

Combine sugar, flour, soda, and cocoa; stir well, and set aside.

Combine butter and water in a small saucepan; cook over medium heat, stirringoccasionally, until butter melts.  Pour over dry ingredients.  Beat on medium speed of electric mixer about 1 minute.  Add buttermilk, eggs, and vanilla; beat just until blended.

Pour into a greased and floured 18 x 12 x 1 inch jellyroll pan.  Bake at 400 degrees for 15 to 20 minutes or until a wooden pick inserted in center comes out clean.

Immediately spread frosting over brownies.  Cool and cut into squares.

Yield:  4 1/2 dozen (2 inch) squares

Frosting

1 (16 ounce) package powdered sugar, sifted
Dash of salt
1/4 cup cocoa
1/2 cup butter
1/3 cup milk
1 teaspoon vanilla extract
1 cup chopped pecans

Combine sugar, salt, and cocoa; stir well, and set aside.

Combine butter and milk in a heavy saucepan.   Cook over low heat, stirring occasionally, until butter melts.  Pour into cocoa mixture; beat until smooth.  Stir in vanilla and pecans.

Yield:  Enough for 4 1/2 dozen (2 inch) squares
