Ingredients
.....4 tablespoons butter .....2 tablespoons minced shallots .....1 pound mushrooms, diced .....1 1/2 teaspoon salt .....1 teaspoon lemon juice .....4 eggs .....1 cup heavy cream .....1/8 teaspoon pepper .....1/8 teaspoon nutmeg .....1/2 cup grated Swiss cheese .....1 baked pie shell |
PreparationMelt 3 tablespoons butter; add shallots, mushrooms, 1 teaspoon salt and lemon juice. Simmer, covered for 10 minutes or until liquid evaporates and mushrooms are tender. Beat eggs with cream; add remaining salt, pepper and nutmeg. Stir in mushroom mixture; pour into pie shell. Sprinkle with cheese; dot with remaining butter.Bake at 350 degrees for 35 minutes or until knife inserted in center comes out clean. |
