Meat Loaf With Cheese Stuffing

Ingredients

.....3 pounds ground beef
.....3 cups soft bread crumbs
.....1 cup minced onions
.....1/2 cup minced green pepper
.....4 eggs, slightly beaten
.....3 tablespoons horseradish
.....1 tablespoon salt
.....2 tablespoons prepared mustard
.....1/4 cup evaporated milk
.....1/4 cup catsup
.....1 (16 ounce) package sharp cheese slices
.....Minced parsley to taste

Preparation

Preheat oven to 400 degrees. Mix ground beef, crumbs, onions and green pepper lightly into eggs. Add remaining ingredients except cheese and parsley; mix lightly. Divide mixture into three parts; pat one part into large loaf pan. Cover with overlapping cheese slices. Spread with second part of ground beef mixture. Add layer of cheese slices. Spread with remaining ground beef mixture. Bake for 45 minutes. Crumble 2 cheese slices over top. Bake for 5 minutes longer. Cool for 15 minutes before serving. Garnish with parsley.
