Mandarin Cheesecake


Ingredients

.....1 cup graham cracker crumbs
.....2 1/4 cups sugar
.....1/4 cup butter, melted
.....5 (8 ounce) packages cream cheese
.....6 eggs
.....1/2 cup heavy cream
.....1 teaspoon lemon flavoring
.....1/4 cup flour
.....1/4 teaspoon salt
.....1 (11 ounce) can Mandarin orange slices
.....1 small jar apple jelly, melted


Preparation

Combine crumbs, 1/4 cup sugar and butter, mixing well; press onto bottom of greased 9 inch springform pan.  Beat cheese until fluffy.  Add eggs, one at a time, to cheese; beat well after each addition.  Combine cream and lemon flavoring; blend into cheese mixture thoroughly.  Mix remaining sugar, flour and salt together; add to cheese mixture, beating until smooth.  Pour into crumb lined pan.  Bake at 475 degrees for 15 minutes; reduce ehat to 250 degrees.  Bake for 1 hour and 15 minutes longer.  Remove from oven; cool.  Drain orange slices; arrange slices over top of cake.  Spoon jelly over orange slices; refrigerate.

Yield:  12 servings
