Linguine With White Clam Sauce


Ingredients

.....4 ounces linguine
.....1/4 cup thinly sliced green onion
.....1 clove garlic, minced
.....2 tablespoons butter
.....2 tablespoons all purpose flour
.....Dash white pepper
.....3/4 cup milk
.....2 (6 1/2 or 7 1/2 ounce) cans minced clams
.....1/2 cup sliced pitted ripe olives
.....2 tablespoons snipped parsley

Preparation

Cook linguine following package directions.  Drain; keep warm.

In a 1 quart microwave safe casserole micro cook green onion, garlic, and butter, covered, on 100% power (high) for 1 to 2 minutes or till onion is tender.  Stir in flour and pepper.  Add milk.  Cook, uncovered, on high for 3 to 5 minutes or till thickened and bubbly, stirring every minute.

Drain clams; reserve 1/4 cup juice.  Add clams, reserved juice, olives, and parsley to milk mixture.  Cook, uncovered, on high for 1 to 2 minutes more or till mixture is heated through.  Toss with linguine.  Serve at once.

Yield:  2 servings
