Lemon Cream Cheesecake With 3 Glazes


Ingredients

.....2 1/2 cups graham cracker crumbs
.....1 3/4 cups sugar
.....1/2 cup soft butter
.....3 (8 ounce) packages cream cheese, softened
.....3 tablespoons grated lemon peel
.....3 tablespoons flour
.....4 eggs
.....1/2 cup lemon juice


Preparation

Combine crumbs, 1/4 cup sugar and butter; mix well.  Press into bottom and on sides of greased 12 x 8 inch baking dish.  Combine cream cheese, lemon peel, 1 1/2 cups sugar and flour; beat with mixer at medium speed until smooth and blended.  Beat in eggs, one at a time; stir in lemon juice.  Pour into crust.  Bake at 350 degrees for 35 to 40 minutes or until center is firm.  Cool on wire rack.  Refrigerate for 4 hours or longer.  Lightly score filling in half crosswise.  Mark each half diagonally, making two crosses, 8 sections in all.  Spoon glazes over alternate sections, making a pattern.  Use Pineapple Glaze for 3 sections, Blueberry Glaze for 3 sections and Strawberry Glaze for 2 sections.  Refrigerate for 1 hour; cut into squares to serve.

Pineapple Glaze

1 tablespoon sugar
2 teaspoon cornstarch
1 (8 3/4 ounce) can crushed pineapple

Combine surgar and cornstarch in small saucepan; stir in pineapple.  Bring to a boil over medium heat, stirring constantly; cook for 1 minute. Cool.

Blueberry Glaze

1 (12 ounce) package frozen blueberries, thawed
1 tablespoon sugar
2 teaspoon cornstarch

Drain blueberries, reserving liquid.  Combine liquid and enough water to make 1/2 cup liquid.  Combine sugar and cornstarch in saucepan.  Stir in liquid.  Bring to a boil over medium heat, stirring constantly for 1 minute.  Remove from heat; cool slightly.  Stir in blueberries.  Cool thoroughly.

Strawberry Glaze

1 (10 ounce) package frozen strawberry halves, thawed
1 tablespoon sugar
2 teaspoons cornstarch

Drain strawberries; reserve juice.  Add enough water to reserved juice to make 1/2 cup liquid.  Combine sugar and cornstarch in saucepan; stir in liquid.  Bring to a boil over medium heat, stirring constantly; cook for 1 minute.  Remove from heat; cool slightly.  Stir in strawberries.  Cool thoroughly.
