Lemon Cottage Cheese Pie


Ingredients

.....1 unbaked 10 inch pastry shell
.....1 (8 ounce) carton cottage cheese
.....1 1/4 cups sugar
.....1 tablespoon all purpose flour
.....1/4 teaspoon ground nutmeg
.....Grated rind and juice of 1 lemon
.....2 tablespoons melted butter
.....1 teaspoon vanilla extract
.....1/2 teaspoon salt
.....4 eggs, separated
.....2 teaspoons sugar
.....1/2 teaspoon ground cinnamon


Preparation

Prick bottom of pastry shell with a fork.  Bake at 350 degrees for 8 minutes; cool on a wire rack.

Place cottage cheese in a blender; blend until smooth.  Pour into a large mixing bowl.  Add next 7 ingredients and egg yolks; stir well.

Beat egg whites until stiff peaks form; fold into cottage cheese mixture.  Pour into pastry shell.  Combine 2 teaspoons sugar and cinnamon; mix well and sprinkle over pie.  Bake at 350 degrees for 30 to 35 minutes or until center is set.

Yield:  one 10 inch pie

Note:  Pie separates into two layers while baking.
