Hush Puppies

Ingredients

.....1 cup white corn meal
.....1/3 cup sifted all purpose flour
.....1 teaspoon double acting baking powder
.....1/4 teaspoon soda
.....1 teaspoon salt
.....3 tablespoons instant minced onion
.....3/4 cup sour milk
.....2 tablespoons water
.....1 large egg, beaten

Preparation

Combine first 6 ingredients. Mix thoroughly. Stir in remaining ingredients. Let stand 10 minutes for batter to thicken. Drop from a teaspoon into deep fat preheated to 370 degrees or until an inch square of bread browns in the fat in 1 minute. Drain in absorbent paper. Keep warm in a slow oven (300 degrees) while cooking remaining batter.

Yield: About 1 1/2 dozen
