Roasted Pork Casserole |

Ingredients
.....1/2 cup butter .....3 cups (4 medium) new red potatoes .....1 pound pork roast, cut into 1 inch pieces .....1/2 teaspoon salt .....1/2 teaspoon crushed rosemary leaves .....1/2 teaspoon pepper .....1/2 teaspoon sage .....1 teaspoon minced fresh garlic .....2 cups crumbly style herb seasoned stuffing .....1 cup (2 stalks) celery, sliced 1/2 inch .....1 cup chopped red onion .....1/2 cup apple juice .....1/4 cup chopped fresh parsley .....2 medium ripe tomatoes, cut into 1 inch pieces |
PreparationIn deep 10 inch skillet melt 1/4 cup butter until sizzling; add potatoes. Cook over medium high heat, stirring occasionally, until potatoes are lightly browned (10 to 15 minutes). Add pork, salt, rosemary, pepper, sage and garlic. Continue cooking, stirring occasionally, until meat is browned (10 to 12 minutes). Reduce heat to medium. Add remaining 1/4 cup butter and remaining ingredients except parsley and tomatoes. Cover; cook until heated through (7 to 9 minutes). Stir in parsley and tomatoes. Cover; let stand 2 minutes or until heated through.Yield: 6 servings |
