Ingredients
.....1 (4 pound) corned beef brisket.....1 medium onion .....1 stalk celery .....1 carrot .....1 garlic clove, quartered .....1 bay leaf .....1/2 teaspoon rosemary Glaze .....1/3 cup catchup .....2 tablespoons red wine vinegar .....2 tablespoons honey .....2 tablespoons mint jelly .....1 tablespoon butter .....1 tablespoon prepared mustard |
PreparationIn 5 quart saucepot over high heat, heat to boiling first 7 ingredients and enough hot water to cover. Reduce heat to low; cover and simmer 3 1/2 to 4 hours until meat is fork tender.Meanwhile, preheat oven to 325 degrees. For glaze, in small saucepan over medium high heat, heat remaining ingredients to boiling, stirring constantly. Place meat on rack in open roasting pan. Spoon some glaze over meat and bake 20 minutes, basting occasionally, until well glazed. Yield: 10 to 12 servings |
