Gingerbread - Old Fashion Style


Ingredients

.....1 cup molasses
.....1/2 cup sugar
.....1/2 cup butter, softened
.....1/2 cup boiling water
.....1 egg
.....1 teaspoon soda
.....1 teaspoon ground ginger
.....1 teaspoon ground cinnamon
.....1/2 teaspoon salt
.....1/2 teaspoon ground allspice
.....3 cups all purpose flour

.....Lemon Cream Cheese Frosting (recipe below)
.....Lemon twists


Preparation

Combine molasses and sugar; mix well.  Add next 9 ingredients in order listed, mixing well.  Pour batter into a greased and floured 12 x 9 x 2 inch baking pan.

Bake at 350 degrees for 25 to 30 minutes or until wooden pick inserted in center comes out clean.  Do not remove from pan.  Let cool completely; spread top of gingerbread with the Lemon Cream Cheese Frosting.  Cut into squares, and garnish with lemon twists.

Yield:  15 to 18 servings

Lemon Cream Cheese Frosting

1 (3 ounce) package cream cheese, softened
1/4 cup butter, softened
2 cups powder sugar
1 teaspoon grated lemon rind
1/2 teaspoon lemon extract

Combine cream cheese and butter, beating until light fluffy.  Add sugar, and beat well.  Stir in lemon rind and lemon extract.

Yield:  about 1 cup
