Ingredients
Dressing .....2/3 cup vegetable oil .....1/2 cup white wine vinegar .....1 teaspoon basil leaves .....1 teaspoon oregano leaves .....1 teaspoon minced fresh garlic .....1 teaspoon salt .....1/2 teaspoon pepper Salad .....6 ounces uncooked fettucine, broken into thirds .....2 1/2 cups cooked, cubed 1 inch chicken .....2 cups broccoli flowerets .....1 cup (2 medium) carrots, sliced 1/4 inch .....1/2 medium red onion, sliced into 1/8 inch rings .....1 cup halved cherry tomatoes |
PreparationIn jar with tight fitting lid combine all dressing ingredients. Shake to mix; set aside. Cook fettucine according to package; drain. Rinse with cold water. In large bowl combine remaining salad ingredients and drained fettucine. Gently stir in dressing.Yield: 6 servings |
