Cornbread Texas Style

For a crusty cornbread, make sure there is a good "layer" of oil or shortening in the pan..

Ingredients
.....1 1/2 cups cornmeal
.....1/2 cup all-purpose flour
.....1/2 teaspoon soda
.....1/2 teaspoon salt
.....1 cup milk
.....2 eggs, beaten
.....2 tablespoons vegetable oil
.....2 cups (8-ounce) can shredded medium Chedder Cheese
.....1 (8-ounce) can cream style corn
.....1 small onion, chopped
.....12 to 14 slices bacon, cooked and crumbled
.....2 tablespoons chopped pimiento


Preparation

Combine first 4 ingredients; mix well.  Add milk, eggs, and vegetable oil, stirring well.

Stir in remaining ingredients.  Pour into a greased 9 inch square baking pan.  Bake at 350 degrees for 40 to 45 minutes or until lightly browned.

Yield:  9 servings
