Cakes With Green Onions And Dill |

Ingredients
.....1 pound fresh or frozen cod fillets thawed, drained .....2 cups coarse fresh bread crumbs .....1/4 cup chopped green onions .....2 eggs, slightly beaten .....1/2 teaspoon salt .....1/4 teaspoon dill weed .....1/4 teaspoon pepper .....1 tablespoon lemon juice .....1/4 cup butter |
PreparationFlake cod fillets apart with fork or mallet. In medium bowl stir together flaked cod and remaining ingredients except butter. Form into 6 (3 inch) patties. In 10 inch skillet melt butter until sizzling. Place 3 patties in same skillet. Cook over medium high heat until golden brown (4 to 5 minutes). Turn; continue cooking until browned and fish flakes with a fork (3 to 4 minutes). Repeat with remaining patties.Yield: 6 cod cakes |
