Chocolate Sour Cream Cake


Ingredients

.....1/2 cup shortening
.....1 teaspoon soda
.....1/4 teaspoon salt
.....1/2 teaspoon ground cinnamon
.....2 teaspoons vanilla extract

.....1 1/4 cups sugar
.....3 squares (4 ounces) unsweetened chocolate, melted
.....2 large eggs
.....2 cups sifted cake flour
.....1/2 cup sour cream
.....3/4 cup strong, cold coffee

Brown Sugar Frosting (recipe below)


Preparation

Mix together first 5 ingredients.  Gradually blend in 1 cup of the sugar.  Stir in chocolate.  Gradually add remaining sugar, mixing well.  Beat in eggs, 1 at a time.  Stir in flour alternately with sour cream and coffee.  Beat batter 1/2 minute.  Turn into 2 well greased, lightly floured, 8 x 8 x 2 inch pans.

Bake at 375 degrees for 35 to 40 minutes, or until done.  Cool in pans 10 minutes.  Turn out onto wire racks to finish cooling.  Frost with Brown Sugar Frosting.

Yield:  One 8 inch square, 2 layer cake

Brown Sugar Frosting

1/3 cup (2/3 stick) butter
1 cup dark brown sugar
1/4 cup cold water
2 1/2 cups sifted powdered sugar
2 teaspoons vanilla extract

Brown butter in a saucepan.  Add brown sugar and water.  Bring to a boil and boil 1 minute.  Cool.  Add powdered sugar and vanilla extract.  Mix well.

Yield:  Frosting for tops and sides of two 8 inch round or square cake layers
