Cantaloupe Orange Pie

Ingredients

.....4 eggs, separated

.....1 cup sugar
.....1/2 teaspoon salt
.....1 tablespoon lemon juice
.....1 tablespoon grated lemon peel
.....1/2 cup orange juice
.....1 package orange gelatin
.....1/4 cup teaspoon cream of tarter
.....1 1/2 cups diced cantaloupe, drainedl
.....1 10 inch baked pastry shell or crumb crust
.....1 cup whipping cream, whipped


Preparation

Beat egg yolks,  lightly in top of double boiler; add 1/2 cup sugar, salt, lemon, juice and lemon peel.  Cook until mixture coats spoon, stirring frequently; remove from heat.  Bring orange juice to a boil; dissolve gelatin in orange juice.  Stir gelatin into egg yolk mixture; cool.  Beat egg whites and cream of tartar until stiff; beat in remaining sugar gradually.  Fold in gelatin mixure; add cantaloupe.  Pile into pastry shell; top with whipped cream.  Chill for at least 4 hours.

Yield:  8 servings
