Pie With Apricot Glaze |

Ingredients
.....1 can apricot halves .....1 cup sugar .....1/4 cup flour .....1/2 teaspoon salt .....1/4 teaspoon mace .....1/4 teaspoon cinnamon .....2 cups buttermilk .....3 eggs, well beaten .....1 9 inch unbaked pie shell .....4 teaspoons cornstarch .....1/3 cup orange marmalade |
PreparationDrain apricots; reserve 1 cup juice. Combine sugar, flour, salt, mace and cinnamon with buttermilk in top of double boiler. Place over boiling water; cook, stirring constantly until mixture is smooth. Stir small amount of hot mixture into eggs; add egg mixture to hot mixture. Return to heat; cook, stirring constantly until thickened. Pour buttermilk mixture into pie shell. Bake at 350 degrees for 50 minutes or until filling is set. Remove from oven; cool. Mix 1/4 cup reserved syrup and cornstarch until smooth. Bring remaining syrup to a boil; add conrstarch mixture, stirring constantly. Cook until thickened. Remove from heat; blend in marmalade. Arrange apricot halves, cut side down, on top of pie. Cover with glaze. Serve with whipped cream, if desired.Yield: 6 servings |
