Brandy Snaps


Ingredients

.....1 cup sifted cake flour
.....2/3 cup sugar
.....2 teaspoons ground ginger
.....1 teaspoon ground cinnamon
.....1/2 cup molasses
.....1/2 cup butter


Preparation

Sift together the first 4 ingredients and set aside.  Heat molasses just to boiling point in a saucepan large enough for mixing cookies.  Stir in butter.  Add flour mixture.  Mix well.  Drop 1/2 teaspoon portions of dough onto greased cookie sheets, 2 inches apart to allow room for spreading.

Bake at 300 degrees for 15 to 18 minutes.  Remove cookes from oven and cool 2 minutes.  Carefully slip a spatual underneath the cookies and remove them from the pan onto a cooling rack.  Quickly roll each around the index finger or the handle of a wooden spoon.  If cookies become brittle before they are shaped, place in oven for a minute to reheat.  Then remove from pan and roll.  Store airtight.

Yield:  30 snaps
