Blackberry Meringue Pie

Ingredients

.....3 eggs, separated

.....1 cup sour cream
.....1/4 cup melted butter
.....1 cup blackberry jam
.....1/2 cup sugar
.....Dash of salt
.....1 tablespoon cornstarch
.....1 9 inch unbaked pastry shell
.....14 marshmallows
.....1 tablespoon light cream


Preparation

Beat egg yolks lightly; beat in sour cream, 3 tablespoons butter and jam.  Mix sugar, salt and cornstarch; stir into jam mixture.  Pour into pastry shell.  Bake at 425 degrees for 30 minutes.  Cool. 

Melt marshmallows in top of double boiler; stir in remaining butter and light cream.  Cool.  Beat egg whites until stiff; fold into marshmallow mixture.  Spread meringue over pie.  Bake at 350 degrees for 15 minutes or until meringue is browned.

Yield:  6 servings
