Ingredients
.....2 cups sifted flour .....1 1/3 cups sugar .....1 1/2 teaspoon baking powder .....1 teaspoon soda .....1 teaspoon salt .....1/2 teaspoon nutmeg .....1/2 cup shortening, softened .....1 cup mashed ripe bananas .....1/4 cup milk .....1 teaspoon vanilla .....2 eggs .....1/2 cup finely chopped walnuts Sour Cream Frosting (recipe below) |
PreparationSift dry ingredient over shortening. Add bananas, milk and vanilla; mix until dry ingredients are moistened. Beat vigorously for 2 minutes. Add eggs; beat for 2 minutes longer. Stir in walnuts. Pour into greased and floured 9 x 9 x 2 inch pan. Bake at 350 degrees for 35 to 40 minutes or until cake tests doneSour Cream Frosting 1 cup sour cream 1/3 cup brown sugar 1/4 cup broken walnuts Combine sour cream and brown sugar; spread over warm cake in pan. Sprinkle with walnuts. Bake at 350 degrees for 5 minutes or until frosting is set. Cut into squares. Garnish with sliced bananas. Yield: 12 servings. |
