Baked Stuffed Avocado


Ingredients

.....1/2 small onion, finely chopped
.....1/2 green pepper, finely chopped
.....Lemon juice
.....1/4 teaspoon salt
.....Dash of cayenne pepper
.....1/4 teaspoon dry mustard
.....1/2 cup mayonnaise
.....1 (7 ounce) can crab meat, drained
.....1 hard boiled egg, finely chopped
.....2 medium avocados
.....2 slices bread, trimmed
.....2 tablespoons melted butter

Preparation

Combine onion, green pepper, 1 tablespoon lemon juice, salt, pepper, mustard and mayonnaise.  Blend in crab meat and egg.  Cut avocados in half; remove seeds.  Arrange avocado halves, cut side up, in shallow baking dish.  Brush cut sides of avocados with lemon juice.  Mound crab meat mixture on avocado halves.  Crumble bread into bowl.  Add melted butter; toss to coat crumbs well.  Sprinkle crumbs over top of crab meat mixture.  Bake at 350 degrees for 12 to 14 minutes or until bread crumbs are brown.  Garnish with parsley.

Yield:  4 servings
